How to pan fry a piece of fish to crispy perfection

You’ll need: A piece of salmon – 250g, 1 tsp salt, 1tsp pepper, 4 Tbs extra virgin olive oil, 2 Tbs butter (or however much you like), a pair of tongs, fry pan – non-stick or heavy cast iron.

Optional: Digital thermometer

Chef Adrian ‘Richo’ Richardson is going to show that perfecting pan frying of one fish allows you to pan fry all fish. Just follow along and feel free to pause if you need to allow a little more cooking time.
